It is not magic. Sanding removes material, and if the operator is heavy handed the paper face of the drywall goes with it. That is the failure mode on this job and it is why we would rather take an extra half day than hand a rented sander to somebody who used one twice.
Steaming, for ceilings that will not sand
Some painted ceilings respond better to heat. A wallpaper steamer held against the surface drives moisture through the paint film and softens the texture behind it, then it scrapes off conventionally. It is slow, wet, and uncomfortable work overhead.
Where it wins is on thick old texture with a single coat of paint over it, particularly on pre-1986 ceilings where we want to keep dust generation as low as possible while a sample is pending. Del prefers it in bedrooms. Nobody prefers it in July.
When to stop and cover instead
There is a point where removal stops making sense. Multiple coats of paint, damaged drywall underneath, and a large area together push the labour past what a quarter inch drywall overlay costs, and the overlay gives you a factory-flat surface with no scraping at all.
