Skimming over the texture, the forgotten option
If the existing texture is unpainted, firmly adhered and not too heavy, joint compound can be applied straight over it and sanded flat. No scraping, far less mess, and no bags of wet texture going out through the house.
The conditions matter and they are not negotiable. Loose or peeling texture will take the skim off with it. Heavy texture needs so much compound to bury that the weight becomes a real question. And it does nothing about a ceiling you suspect contains asbestos, since the sanding stage disturbs plenty. Where it fits, it is quick and genuinely good.
Removal, the default and usually right
Scraping gets you back to the original drywall and lets you see and fix what is up there before finishing. It is the only route that improves the ceiling rather than adding to it, and it is the only one with no height cost.
